Have a happy sehri with this Aloo Soya Tarkari & Masala Paratha recipe.
Ingredients
Prepare Aalo Soya Tarkari
- Cooking oil 4 tbs
- Lehsan (Garlic) chopped 1 & ½ tbs
- Pyaz (Onion) 1 medium chopped
- Kalonji (Nigella seeds) ½ tsp
- Tamatar (Tomatoes) chopped 2 large
- Namak (Salt) 1 tsp or to taste
- Sabut dhania (Coriander seeds) roasted & crushed 1 tsp
- Lal mirch (Red chilli) crushed 1 tsp
- Zeera (Cumin seeds) roasted & crushed 1 tsp
- Haldi powder (Turmeric powder) ½ tsp
- Aalo (Potatoes) peeled & cubes 4 large
- Water ¾ Cup or as required
- Soya (Dill) chopped 2 Cups
- Hari mirch (Green chillies) sliced 2-3
- Lemon juice 1 tbs
- Hari mirch (Green chilli) sliced
Prepare Masala Paratha
- Atta (Wheat flour) sifted 3 Cups
- Lal mirch (Red chilli) crushed ½ tsp
- Kalonji (Nigella seeds) ½ tsp
- Zeera (Cumin seeds) roasted & crushed ½ tsp
- Namak (Salt) 1 tsp or to taste
- Kasuri methi (Dried fenugreek leaves) 1 tsp
- Haldi powder (Turmeric powder) ¼ tsp
- Hara dhania (Fresh Coriander) chopped 1-2 tbs
- Ghee (Clarified butter) 2 tbs
- Cooking oil 1 tsp
- Water 1 Cup or as required
Directions
Prepare Aalo Soya Tarkari
In a wok,add cooking oil,garlic & mix well.
Add onion & sauté until translucent.
Add nigella seeds & mix well.
Add tomatoes,mix well & cook until tomatoes are soft (3-4 minutes).
Add salt,coriander seeds,red chilli crushed,cumin seeds,turmeric powder,mix well & cook for 2 minutes.
Add potatoes & mix well.
Add water & mix well,cover & cook on low flame until potatoes are tender (10-12 minutes) then cook on high flame until oil separates.
Add dill & mix well.
Add green chillies,lemon juice & mix well,cover & simmer on low flame for 3-4 minutes.
Garnish with green chilli & serve.
Prepare Masala Paratha
In a bowl,add wheat flour,red chilli crushed,nigella seeds,cumin seeds,salt,dried fenugreek leaves, turmeric powder,fresh coriander & mix well.
Add clarified butter & mix well until it crumbles.
Gradually add water & knead until dough is formed.
Grease with cooking oil,cover & let it rest for 25-30 minutes.
Knead dough again until smooth.
Take a small dough (115g),make a ball,sprinkle dry flour & roll out with the help of rolling pin.
Add & spread clarified butter,sprinkle dry flour & fold like a fan,twist & roll to make a dough ball & tuck the end inside it.
Sprinkle dry flour,press gently & roll out the dough with the help of rolling pin.
On heated griddle,place rolled dough & cook from both sides with clarified butter (makes 7).
Serve aalo soya tarkari with masala paratha!
